			<content:encoded><![CDATA[<p><a title="" href="http://christee-lee.brakel.com.au/wp-content/flagallery/birthday-cakes/fishing_farewell_3.jpg"><img class="flag-singlepic flag-left" src="http://christee-lee.brakel.com.au/wp-content/flagallery/birthday-cakes/thumbs/thumbs_fishing_farewell_3.jpg" alt="" align="left" /></a>This week my task was to create a Farewell cake for a miner who is also a farmer who was resigning from his mining job to go fishing!  The brief I was given was a naked man with red hair  in a boat with a sheep.  Hmmm, OK I&#8217;m up for that challange!  Modelling people is somewhat new to me.  I&#8217;ve not had much practise with them and was a little nervous.  I got straight to the task at hand and modelled my naked man.  I realised that the technique involved in getting the &#8220;bits and pieces&#8221; of a naked man was well beyond my talent and decided I would nicely place a hand modelled farmer&#8217;s hat over the particular area in question. My client was happy with this as quite honestly had not put that much thought into this area hehe.  I also hand modelled a dinghy, sheep, fishing rod, life ring, fish, &#8220;Gone Fishing&#8221; sign, rocks and seaweed.  I baked a 25cm round caromello mud cake and covered it with milk chocolate ganache and blue marbelled fondant.  I was quite happy with the end result, as was my client!  See my testimonials page for her response! This was such a fun cake to make and I enjoyed every minute if it <img src='http://christee-lee.brakel.com.au/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  <img src='http://christee-lee.brakel.com.au/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>My next project was 50 mini cupcakes for a Hawiian themed Hen&#8217;s Party.  I always love mini&#8217;s! I made a batch of vanilla cupcakes in red, pink and yellow cases.  I decided to test out my Christmas present (new piping tips) and chose three different tips.  I made three different buttercreams, red boysenberry flavour, pink strawberry flavour and yellow lemon flavour.  I piped buttercream onto each little cake.  I then topped each mini cuppie with a hand made fondant flower.  What cute little cakes!</p>
<p>I&#8217;ve also had four more bookings for the coming weeks.  What a great start to 2012!</p>

			<content:encoded><![CDATA[<p>2012 is here! Hope you all had a fabulous Christmas and New Year! 2011 was a busy year and seemed to fly by.  We had a very sad end to 2011 as we lost my husband&#8217;s father to cancer just before Christmas. We are looking forward to a happy and healthy 2012.</p>
<p>I&#8217;ve finally added the two Christmas cakes I made to the gallery.  My memory card in my camera decided to cease working with all the photos which had not been uploaded still on there.  Luckily I managed to take just a couple at the last minute before delivery.</p>
<p><a title="" href="http://christee-lee.brakel.com.au/wp-content/flagallery/christmas-cakes/vicki_christmas_2011.jpg"><img class="flag-singlepic flag-left" src="http://christee-lee.brakel.com.au/wp-content/flagallery/christmas-cakes/thumbs/thumbs_vicki_christmas_2011.jpg" alt="" align="left" /></a>So, Fruit cake with white chocolate chips is what both of these cakes are.  They are covered in white chocolate ganache and fondant.  The larger square cake is a 25cm.  The lady who purchased this cake was planning to give it as a gift to her mother for Christmas as she loves this fruit cake (I made her 80th Birthday cake last year) I had free reign with the design and actullay found myself struggling to come up with ideas for this one.  I knew I wanted it to be a more traditional look, but thought should I be going more of an Aussie Christmas look as the traditional look is a winter Christmas.  I decided to stick with the traditional winter Christmas theme and covered the entire cake in white fondant with white fondant snow flakes.  I hand modelled a Christmas tree and presents and two snowmen.  I added an extra special touch with the gold and pearl cashous and completed the snow effect with white pearl shimmer dust.</p>
<p><a title="" href="http://christee-lee.brakel.com.au/wp-content/flagallery/christmas-cakes/dan_christmas_2011.jpg"><img class="flag-singlepic flag-left" src="http://christee-lee.brakel.com.au/wp-content/flagallery/christmas-cakes/thumbs/thumbs_dan_christmas_2011.jpg" alt="" align="left" /></a>The second cake was a gift for my sister and her family.  She was keen to have a Christmas cake just like Nanna Joy had made in the past.  She had asked for this for the previous Christmas but I unfortunately didn&#8217;t have the time.  So I couldn&#8217;t let another year go by without her Christmas cake.  I decided to add my personal touch to this and gave her the fruit and white choc cake.  It was a smaller cake, only a 15cm round.  I decided this one should be a more fun cake than the previous one and went with Santa&#8217;s belly!  I covered the cake in white chocolate ganache and then red fondant.  I wrapped a black piece of fondant around the cake for Santa&#8217;s belt and added a big gold belt buckle.  My sister was happily suprised with her gift and says she enjoyed the cake. <img src='http://christee-lee.brakel.com.au/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

			<content:encoded><![CDATA[<p><a title="" href="http://christee-lee.brakel.com.au/wp-content/flagallery/wedding-cakes/tiffdavid_01.jpg"><img class="flag-singlepic flag-left" src="http://christee-lee.brakel.com.au/wp-content/flagallery/wedding-cakes/thumbs/thumbs_tiffdavid_01.jpg" alt="" align="left" /></a>This weekend I made a wedding cake for Tiff &amp; David.  A topsy turvy three tiered square cake was the plan.  The colour theme was purple and champagne.  This cake involved a lot of firsts for me, my first fondant covered topsy turvy.  I had made a smaller topsy tuvy cake for my son&#8217;s birthday as a trial for this cake however this time decided on a different method for a sturdier cake.  This time I cut out each tier for the tier above to sit in, allowing for a much sturdier cake and still that topsy turvy look.  I also had two new flavoured cakes in there at the request of the bride..I&#8217;m not one to say no to trying a different cake!!! <img src='http://christee-lee.brakel.com.au/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />   I now have two new flavours to add to the flavours list!  The bottom tier was a jaffa mud (newbie <img src='http://christee-lee.brakel.com.au/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  ) made with dark chocolate, cointreau and orange juice = YUMMY! This tier was decorated in two shades of purple and champagne fondant stripes.  The middle tier was passionfruit mud (the other newbie) made with white chocolate and passionfruit pulp = YUMMY AGAIN!! (my new fave!!).  This tier was decorated in champagne coloured fondant with a quilted pattern and purple sugar pearls.  The top tier was peppermint mud made with dark chocolate and peppermint essence.  This tier was decorated with a light purple coloured fondant and hand piped champagne coloured hearts.  Three awesomely flavoured cakes <img src='http://christee-lee.brakel.com.au/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   The initial toppers were made by the bride herself, adding the pefect top!  This was also the first time that I had travelled with a tiered cake in pieces and assembled on site.  I am so pleased I decided to do it this way as it provided so much ease in travel (three boxes sitting flat in the back of my car) and avoided a lot of stress wondering if it was OK.  As the cake travelled approximately 30km, doing it in pieces was really the only way to go!  The reception venue looked gorgeous and I think the cake colours matched the venue perfectly.  Congratulations Tiff &amp; David!!! &lt;3</p>

			<content:encoded><![CDATA[<p><a title="" href="http://christee-lee.brakel.com.au/wp-content/flagallery/birthday-cakes/bunt_christening_01.jpg"><img class="flag-singlepic flag-left" src="http://christee-lee.brakel.com.au/wp-content/flagallery/birthday-cakes/thumbs/thumbs_bunt_christening_01.jpg" alt="" align="left" /></a>This week I made a Christening Cake for the Bunt family.  Their two sons had a joint Christening and wanted a cake that followed through with the big brother, little brother love.  This cake is a two teir round cake with the bottom teir being a 20cm caromello mud and the top teir being a 15cm white chocolate mud.  Both teirs were covered in ganache and a thin layer of rolled fondant.  The bottom teir was decorated with three different shades of blue stripes which I followed through to the cake board.  The top teir was decorated with three different shades of blue spots in varying sizes.  To top the cake I hand modelled two blue teddy bears, one smaller than the other being a big and little brother bear.  The big brother bear is holding his blankie.  I hope the boys had a lovely Christening Day!</p>

			<content:encoded><![CDATA[<p>I&#8217;ve had quite a busy couple of week&#8217;s and have therefore been very slack with updating the site.  I have two cakes to show you from last week.  One was a very special cake made for my dear old nan&#8217;s 90th birthday and the other was 16 mini spongebob cakes for a three year old&#8217;s birthday.</p>
<p><a title="A three tiered bee hive, Cherry Ripe mud, caramel mud and white chocolate mud" href="http://christee-lee.brakel.com.au/wp-content/flagallery/birthday-cakes/queen_bee2.jpg"><img class="flag-singlepic flag-left" src="http://christee-lee.brakel.com.au/wp-content/flagallery/birthday-cakes/thumbs/thumbs_queen_bee2.jpg" alt="Queen Bee Nan's 90th" align="left" /></a>So starting with Nan&#8217;s cake.  We have always spoke of Nan being the &#8220;Queen Bee&#8221; of our family, with six children of her own plus grandchildren, great grandchildren and even her first great great grandchild on the way!! At family gatherings she will sit back and take it all in and appreciate the lovely big family she has created hence the name &#8220;Queen Bee&#8221;.  I thought it would be perfect to create a cake around this theme and decided on a beehive shaped cake with the Queen Bee on top and all her little bees around the hive.  I had initially planned to have this the traditional yellow beehive, bees etc however my Aunties informed me they were having a lilac, silver and black theme for her party.  OK so now I was thinking of scratching the whole <a title="A three tiered bee hive, Cherry Ripe mud, caramel mud and white chocolate mud" href="http://christee-lee.brakel.com.au/wp-content/flagallery/birthday-cakes/queen_bee1.jpg"><img class="flag-singlepic flag-left" src="http://christee-lee.brakel.com.au/wp-content/flagallery/birthday-cakes/thumbs/thumbs_queen_bee1.jpg" alt="Queen Bee Nan's 90th" align="left" /></a>beehive idea and thinking of going something totally different to fit in with their colour scheme until my mum suggested being a little creative, sticking with my theme and making small changes to fit in with the colour scheme.  So, a lilac beehive it is!!! on a silver board with little silver and black bees.  I decided to keep the Queen Bee yellow and black and gave her a silver crown and star wand.  The actual beehive cake was made from three tiers of round mud cakes, Cherry Ripe mud, caramel mud and white chocolate mud.  Each tier was separated with a thin board for ease of serving and allowing a choice of cake flavour for all guests.  I was happy with the end result and hope that Nan liked it too! <p><a title="Vanilla cake" href="http://christee-lee.brakel.com.au/wp-content/flagallery/cup-cakes/mini_spongebobs.jpg"><img class="flag-singlepic flag-left" src="http://christee-lee.brakel.com.au/wp-content/flagallery/cup-cakes/thumbs/thumbs_mini_spongebobs.jpg" alt="Mini Spongebob Cakes" align="left" /></a>My next project for the weekend was 16 mini Spongebob Square Pants cakes.  Someone had seen the Spongebob Cake I had made for my niece a few weeks earlier and had a nephew who was also Spongebob mad.  She thought a few mini Spongebob cakes would be the perfect gift for this little three year old and his little friends.  To make these, the cake was the easy part.  A vanilla slab cake which I devided into 16 mini rectangles.  The hard part was covering each of these little fellows with a thin layer of ganache then creating mini Spongebobs with coloured fondant.  This little excercise took HOURS!!! but was well worth the effort!  They looked a treat all set out on the board, the client was happy and hopefully her little nephew was too! <img src='http://christee-lee.brakel.com.au/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

With a Spongebob themed birthday party, there was no question about what cake she wanted.  I used a 28cm rectangle tin and baked a milk chocolate mud cake.  I filled the cake with a chocolate mousse and strawberry oreo filling (a bit of an experiment which paid off) I cut out some sponge holes and covered the entire cake with milk chocolate ganache.  The cake was then covered in coloured fondant to look like Spongebob.  The entire cake was edible including his legs and arms.  My niece was very happy with her cake as where her friends! 			<content:encoded><![CDATA[<p><a href="http://christee-lee.brakel.com.au/wp-content/flagallery/birthday-cakes/ben_10.jpg"><img class="flag-singlepic flag-left" src="http://christee-lee.brakel.com.au/wp-content/flagallery/birthday-cakes/thumbs/thumbs_ben_10.jpg" alt="Ben 10" align="left" /></a>Today is my little man&#8217;s 6th birthday.  I gave him the option of any cake he wanted.  This decision proved quite a difficult task, with the choice changing with each suggestion made.  He finally settled on a Ben 10 cake.  His choice of flavour was vanilla (quite a change from the usual mudcake).  As he chose a plainer type cake, I suggested adding a filling.  Jake is a huge fan of Oreo&#8217;s, so we went with Cookies and Cream filling.  Using my awesome Agbay cake leveller, I levelled the 20cm round cake then made a nice cut through the centre.  This is actually the first time I have filled a cake so it was a bit of an experiment for me.  I filled the centre with the freshly made Cookies and Cream filling (next time, I will add double the amount of filling I think).  I covered the entire cake with a thin layer of vanilla buttercream and then decorated with coloured fondant to create a Ben 10 Omnitrix.  Graymatter and all other decorations were hand made with fondant. Jake loved his cake.  Happy 6th Birthday Dude!! xxx</p>

This cake is a 20cm tall square cake.  I used a double cake to get the height with the bottom half being milk chocolate mud and the top half being white chocolate mud. What a yummy combination!!  Both covered in ganache and a thin layer of fondant.  The cake was decorated with purple and silver/grey decorative strips, similar to that of a picture provided by the client.  I went with the &#8220;explosion&#8221; top (my first one!) with the number 18 in the centre, balls &amp; stars on decorative wire and a banner on top with the words &#8220;Happy 18th Gabrielle&#8221;.  I used lustre dust to give a slightly metallic look to the colours.  I was happy with the end result. <p>Earlier this week I received a parcel which my husband had ordered for me.  The &#8220;Agbay&#8221; cake leveller! Now I must say that this cake leveller is awesome!!!  I have previously been using the large Wilton cake leveller and have struggled with it, finding that the blade bends whilst cutting and having to need too many hands to keep it cutting straight.  Having now used the Agbay, I absolutely recommend it to anyone who like me has a passion with cake decorating.  It took me a total of 3 minutes to level my cake including the measuring up of the height I wished to cut.  The blade cut beautifully with ease and precision.  The blade did not bend and had a perfect finished result.  I am very impressed!!!  Thanks Dame for finding me the absolute best investment we have made yet.</p>
